The dish consists of just a few ingredients: sticky rice, coconut milk, sugar, salt and of course ripe mango. The sticky rice is first soaked for several hours or overnight, then steamed until soft and mixed with warm coconut milk into which sugar and a pinch of salt have been added. The result is a silky and gently sweet rice pudding.

The choice of mango is equally important — the best results come from a well-ripened, fragrant fruit with soft, juicy flesh. Thai cuisine often uses Nam Dok Mai variety, but other sweet mango varieties work equally well. The dish is served chilled with a creamy coconut sauce.
